Guacamole is my favorite! Not only is it super easy to make, but it is incredibly healthy. Avocados are one of the most nutritious fruits you can eat! They are virtually the only fruit with monounsaturated fats (aka, the good fats!) and they are cholesterol free. Research show they can actually help lower cholesterol. They are also an excellent source of potassium (more than twice the amount found in a banana!) and are packed with fiber, Vitamin E, Folic Acid and B-Vitamins. Now I don’t have to feel guilty for eating the whole batch!
This is a recipe that I came up with a long time ago. It’s very basic but everyone loves it! If you are bringing this to a party, you will want to be sure to double or even triple the recipe. It never lasts long. Also, I should warn you! People will be asking you to make it again and again. So be prepared for that!
Here is a guide for picking the perfect avocados for your guacamole. I always pop off the top to make sure it’s a good avocado before purchasing!
“World Famous” Guacamole
2 ripe avocados”World Famous” Guacamole
1 tbs. of chopped cilantro
½ c of diced tomatoes
2 ½ tbs. of finely chopped red onion
1 tablespoon of finely chopped jalapeño (remove seeds and membrane for mild guac)
1 garlic clove, minced
½ tsp. of adobo seasoning or salt
Juice from half a lime
Combine all ingredients in a bowl or Molcajete. Mash with a fork, potato masher, or Molcajete stone until the desired consistency is achieved. For best results, refrigerate for an hour to let the flavors blend. Serve with warm tortilla chips, plantain chips, or fresh cut veggies. Great addition to tacos, nachos, enchiladas and salads. It can also be used on sandwiches in place of mayo.
TIP: If you have left overs take a piece of saran wrap, cover the bowl, and gently push the saran wrap onto the guacamole. Make sure that there is no air in between the saran wrap and guacamole and refrigerate. This will prevent the guacamole from turning brown.
