If you are looking for a healthier alternative to the mashed potatoes, this is the recipe for you. This dish is just as comforting and rich as the real deal. I made this to pair with our Valentine’s Dinner of Steak, Shrimp, and Asparagus and it was delicious! The garlic and herbs pack a major flavorful punch! My son heard that I was making cauliflower mash instead of regular mashed potatoes and was not excited to say the least. However, when dinner was served he could not get enough. The next day he even had leftovers as an after school snack! This is a recipe that I will be keeping on the menu week after week!
1 large head of cauliflower mash
2 small Yukon potatoes (optional)
1 tablespoon of fresh basil, chopped*
1 tablespoon of fresh thyme, chopped*
1 tablespoon of fresh oregano, chopped*
2 cloves of garlic or 2 teaspoons of garlic powder
1 tablespoon of olive oil or ghee
1 teaspoon of salt
1 teaspoon of fresh ground pepper
Chopped Fresh Italian Parsley as garnish for serving (optional)
*Can substitute for dried herbs but fresh is best!*
1. Boil water in a large pot. Cut up head of cauliflower and potatoes (if using) into small chunks, peel garlic cloves, and add everything to your pot of boiling water. Allow cauliflower/potatoes/garlic to boil for about 15 minutes or until fork tender.
2. Remove pot from stove and carefully drain the water using a colander. Return the cauliflower/potatoes/garlic to the pot.
3. Add basil, thyme, oregano, garlic powder (if using instead of cloves), olive oil/ghee, salt, and pepper to the pot. Using an immersion blender, blend until cauliflower is smooth. Serve immediately with some fresh chopped parsley as a garnish (optional) and enjoy!
