Lately, my family has been in a bit of a breakfast rut. Eggs, Bacon (or Sausage), and Hashbrowns. The typical breakfast. As delicious as this typical breakfast is, sometimes you just need a change…..something different from the norm.
That’s where the Frittata comes in!
Not only is this dish easy to make and delicious, but it’s fun to say in an Italian accent! Go ahead….say it a few more times. I’m not judging anyone!
The Frittata appears to be the Italian’s version of an Omelet. This dish is very satisfying yet healthy. It can even be made Whole30 compliant. Just omit the dairy! In this recipe, I used breakfast sausage and red bell peppers. There are so many different directions you can go with this dish so don’t be afraid to get creative and experiment with the ingredients that you use. This dish would be delicious with all different types of veggies thrown in. Bacon of course would make an excellent addition as well!
The best part of the Frittata? If you have leftovers, they reheat beautifully for breakfast, lunch, or dinner during the workweek.
If you are are looking for something that is sweet (yet healthy) and easy to whip up then these Blondies are for you. Last night I was craving a warm, out of the oven treat but didn’t want to have to run to the store to gather ingredients. I looked around in my pantry, threw somethings together, placed it in a baking dish, and this was the result. Warm, soft, goey Blondies! Similar in texture to a brownie, these healthy treats are naturally sweetened (no refined sugar!), grain free, gluten free, and packed with protein! No need to feel guilty if you eat some for breakfast….just ask my husband! Yep, he totally did that this morning. 😉
Spring has arrived!
Well, sort of….it doesn’t quite feel like it here in the Midwest but I know beautiful weather, bright tree blossoms, and fragrant flowers are just around the corner. I was delighted to see a few bulbs breaking through the soil in my back yard the other day.
These muffins are the perfect way to add a little sunshine to your life while we wait for the Spring weather to arrive. These Lemon-Blueberry Muffins make the perfect breakfast on the go or an afternoon delight! The lemon perks these muffins right up without over powering them and aides in allowing the blueberry flavor to shine. Tastes like spring! These muffins are super moist and you will never believe that they are gluten free, grain free, and dairy free!
Breakfast on the weekends has remained hearty and delicious throughout the Whole30 thanks to Sweet Potato Hash! It has been a great alternative to the traditional breakfast potatoes we normal serve on the weekends. This dish is easy to prepare and would pair great with a nice grilled steak or chicken breast for dinner.
Sweet Potato Hash
For breakfast, I serve two sunny side up or over easy eggs on top of the hash to make a delicious skillet! A couple of times I even sliced up and added 2 links of Aidell’s Chicken & Apple Sausage to the sweet potato mixture before roasting in the oven. This made a great addition to our skillets. Especially for those that like to have a little meat with their breakfast. It’s one of the only Whole30 compliant sausages that I have found as it has no sugar or nitrates added. The boys love it!
