Paleo Chocolate Chip Blondies (Gluten Free, Grain Free)

If you are are looking for something that is sweet (yet healthy) and easy to whip up then these Blondies are for you.  Last night I was craving a warm, out of the oven treat but didn’t want to have to run to the store to gather ingredients.  I looked around in my pantry, threw somethings together, placed it in a baking dish, and this was the result.  Warm, soft, goey Blondies!  Similar in texture to a brownie, these healthy treats are naturally sweetened (no refined sugar!), grain free, gluten free, and packed with protein!  No need to feel guilty if you eat some for breakfast….just ask my husband!  Yep, he totally did that this morning.  😉

Warm, straight out of the oven Chocolate Chip Cookies are a personal favorite of mine.  Dark, gooey chocolate…chewy on the inside…I am drooling just thinking about it!  Good thing I just baked a batch of these delicious Dark Chocolate Chip Cookies!

These cookies are perfect for those that need to adhere to a gluten free, grain free, and/or dairy free diet but they will also satisfy those that do not.  They’re also Paleo friendly and just so happen to be vegan!

They taste delicious straight out of the oven but they remain moist and chewy long after they have cooled off. Pack one in your lunch or have one as a treat at the end of a long day.  Heck, eat one for breakfast if you’d like!  I won’t tell anyone.

Lemon-Blueberry Muffins


Spring has arrived!

Well, sort of….it doesn’t quite feel like it here in the Midwest but I know beautiful weather, bright tree blossoms, and fragrant flowers are just around the corner.  I was delighted to see a few bulbs breaking through the soil in my back yard the other day.

These muffins are the perfect way to add a little sunshine to your life while we wait for the Spring weather to arrive.  These Lemon-Blueberry Muffins make the perfect breakfast on the go or an afternoon delight!  The lemon perks these muffins right up without over powering them and aides in allowing the blueberry flavor to shine.  Tastes like spring!  These muffins are super moist and you will never believe that they are gluten free, grain free, and dairy free!

Paleo Key Lime Cupcakes


Over the weekend, I was itching to do a little baking!  It has been a hot minute since I’ve been able to bake any treats.  No treats were allowed on the Whole30, even if the ingredients were compliant.  So I did a little Pinterest-ing for some bake good inspiration and came across a recipe for these cupcakes.  I made a few little tweaks and they turned out wonderful!   These lovely treats are gluten free, grain free, dairy free and completely free of refined sugar!

The texture of the cakes are kind of a cross between a muffin and a cupcake.  These bad boys are super moist!  The subtle sweetness from the honey and coconut sugar balances out the tartness from the lime juice and zest perfectly.   The smooth and creamy frosting is so lush you will have a hard time believing it’s free of dairy and refined white sugar.  I love how festive these cupcakes look when garnished with lime zest and a lime slice.  These would make a great addition to any  St. Patrick’s Day celebration!

Double Dark Chocolate Chip Cookies


That’s right.  You read the title correctly.  It’s not just a dark chocolate chip cookie but a DOUBLE Dark Chocolate Chip Cookie!   This cookie is gluten free and grain free as it is made with coconut flour!

Coconut flour is dried, de-fatted coconut meat grounded into a fine flour.  It’s a great alternative for those that are on a paleo or carb conscious diet as it is extremely high in fiber and low in carbs.   It can be a little tricky to bake with as it is a remarkably absorbent flour, but I got it all figured out for you!

It is a little more cake like than your average cookie, but delicious nonetheless.  And with only 87 calories per cookie, you really can’t go wrong!    ***Please excuse the photo…these cookies were hard to photograph!***

Gluten Free Chocolate Chip Pumpkin Bread


It’s that wonderful time of year!  Everything is pumpkin flavored and I love it!  I decided to come up with a gluten free pumpkin bread by altering a banana bread recipe I have.  It came out wonderfully!

I tried coconut sugar for the first time in place of granulated sugar and I am now officially team coconut sugar!  Coconut sugar is low glycemic which makes it a great option for people with diabetes.  It has a high mineral content (rich in potassium, magnesium, zinc, and iron), contains vitamins B1, B2, B3, and B6, and contains 16 amino acids.  A no-brainer over refined white sugar!  It can be substituted cup for cup in all your baked good recipes.

Chocolate Pecan Truffels
